The 9th Edition 100% Islay can trace its origins to the Kilchoman barley harvests of 2007 and 2009, grown in the fertile fields surrounding the distillery.
Once harvested, the barley was hand malted on the Kilchoman malt floor, and gently turned twice daily by the maltmen as it germinated.
The green malt was then smoked using peat cut from the Cnoc Dubh peat banks, the thick peat smoke permeating each barley grain, creating the distinct smoky Kilchoman character, landing around 20PPM.
Once distilled in our unique pot stills, the new make spirit was filled into casks and stowed in dunnage warehouses here at the distillery.
After 9 years of maturation, Kilchoman Founder, Anthony Wills, selected 43 ex-bourbon barrels, marrying the intense vanilla and butterscotch influence of the bourbon soaked barrels with the natural citrus sweetness and peat smoke of Kilchoman.
Finally, the 9th Edition 100% Islay was born, bottled on site without colouring or chill-filtration, standing alone as Scotland’s only Single Farm Single Malt Scotch Whisky, 100% Islay - from barley to bottle.
