Holyrood Distillery was established in 2019 in the centre of Edinburgh’s historic old town with a focus on an innovative approach to distilling, inspired by Edinburgh’s rich brewing history.
Holyrood Distillery Brewers Series No.3 features a portion of the distiller's malt replaced with chocolate malt (which is heavily toasted barley), and this has crafted a soft, roasty-toasty new-make with hints of coffee, caramel, and... unsurprisingly chocolate too!
