Sometimes our Simon can't help himself. Eyeing a couple tonne of exceptional tasting Pinot Gris hanging on the vine at our Wirrega Vineyard in South Australia's Tatiara district Simon "had to pick it" to see what he could make.
A single 2 tonne bin was harvested on the 25th of Feb 2021, before whole-cluster pressing, seeding and leaving to settle for 2 days in a stainless fermentation vessel. The wine was left on light solids for 3 months to allow textural development, before cold stabilisation and bentonite fining 2 days before bottling.
Fragrant scents of spiced nashi pear and apple with notes of quince and gooseberry. The cool 2021 vintage has ensured brilliant and bright acids alongside a smooth and silky texture. Finishes dry with refreshing acidity and a spicy medium length.
Drink from now till 2026.
