The Cooper's Choice range of single cask whiskies from Scotland's finest distilleries are releases from the Family owned Independent Bottlers; The Vintage Malt Whisky Company. The range is a homage to the passion and skill of the Coopers, the craftsmen, who build the barrels for maturation of Scotch Whisky. The range focuses on the impact of maturation in oak, and includes several obscure and rare wood finishes.
In the Highland region, not too far south of Inverness is the Japanese owned Tomatin distillery. The often intense, high-toned and fruity spirit of Tomatin suits itself well to first fill maturation, such as this first fill ex-bourbon 16 Year Old Malt.
This single cask bottling of Tomatin was distilled in 2001 and bottled in 2017 after 16 years in an ex-bourbon barrel. Expect a full-bodied malt with a feisty and fiery character. Loads of pepper, some ice cream with caramel sauce and a sprinkling of white pepper this time around. Ripe, red apples towards the end.
