The Whisky Cellar is an Edinburgh-based independent Scotch Whisky bottler, selecting casks from its private stock at the peak of their character. Founded by Keeper of the Quaich, Keith Bonnington, Keith searches far and wide for casks showing exceptional complexity of flavour and length on the palate.

This single cask bottling of Glenallachie was distilled in November 1996, matured in an American ex-Bourbon cask for 23 years before bottling in August 2020.

This famously delicate Speysider displays notes of baked fruit pastries, fresh herbs, gingerbread and brown sugar. A subtle nose of herbs and grass, but despite it's delicacy the length is spectacular.

Bottled at Cask Strength with no chill filtration.
