The Carn Mor Celebration of the Cask range of Single Cask Whisky from the family-owned independent bottlers, Morrison and Mackay, are a very limited range from distilleries all over Scotland. All the bottles are numbered and once they are gone they cannot be replaced as they are all one off bottlings from a single cask. The Carn Mor Celebration of the Cask releases of Scotch Whisky are bottled at cask strength and are all non-chill-filtered.
This 1997 Dailuaine (21 Year Old) was from a very low first fill ex Bourbon barrel. The Whisky is very rich showing opulent woody vanillan oak with plenty of spice and a generous length. A master class in ex-Bourbon cask Single Cask Scotch Whisky.
Dailuaine in central Speyside forms part of the Diageo portfolio of distilleries, and isfast building a reputation of a true distillery of note. At Dailuaine they tend to limit the amount of copper contact in the distilling process, which results in a Scotch Whisky with more body, and at times meaty characters (similar in vein to Mortlach). Less than 2% of the Whisky produced at Dailuane goes into a marketed single malt Scotch Whisky, the remainder heading for the Johnnie Walker blends.
Only 115 bottles were produced from this very small out turn.
